Bishop Design LLC reinterpreted the glamour of 1950s New York through the design of Carbone Dubai, creating a bold and immersive dining destination within Atlantis The Royal. Conceived as a contemporary expression of the iconic Carbone brand, the restaurant balances theatricality, intimacy and timeless luxury. Rather than replicating heritage references, the design reimagines them through a carefully layered spatial narrative that transports guests into a distinct world inspired by the spirit of New York.

From arrival, guests move through a sequence of spaces defined by deep blue panelled walls, rich red upholstery, geometric marble flooring and ornate coffered ceilings. Bishop Design LLC developed a cohesive design language that allows each area to reveal a different atmosphere while maintaining a strong visual identity. The result is an environment that feels both expansive and controlled, accommodating energetic social occasions and intimate dining experiences within the same setting.

Materiality, lighting and atmosphere were central to the design approach. Rich finishes, warm metallic accents, statement lighting and curated artwork create a sensory-driven experience that evolves throughout the day. Natural light enhances the material palette during lunch service, while chandeliers, table lamps and ambient lighting transform the restaurant into a more intimate evening destination. A distinctive jellyfish installation introduces an unexpected focal point, while one-of-a-kind accessories sourced from around the world reinforce the layered narrative and New York character.

Bishop Design LLC successfully adapted the essence of Carbone to Dubai while preserving the brand’s identity. The introduction of windows and an outdoor terrace, a first for the Carbone concept, reflects the city’s all-day dining culture. Through thoughtful spatial sequencing, immersive storytelling and meticulous detailing, the studio created a restaurant that elevates the Carbone experience while establishing a benchmark for contemporary high-end hospitality design.
