Malherbe Paris conceived Terrace Boulud at Mandarin Oriental, Hong Kong as an immersive destination that moves beyond the typical rooftop experience. The studio’s approach centres on translating Chef Daniel Boulud’s culinary journey into a spatial narrative, using the evocative codes of historic train travel as a guiding framework. This concept informs a sequence of interconnected spaces, where arches, framed views and gradual reveals echo the rhythm of a train carriage and create a carefully choreographed guest journey.

The design balances French brasserie heritage with the specificity of Hong Kong. Traditional elements such as mosaic flooring, timber panelling and brass detailing are reinterpreted through tropical references, botanical motifs and local craftsmanship. Rather than relying on literal storytelling, Malherbe Paris embeds the narrative through movement, light and material, achieving a sense of restraint and clarity.

Functionality is integrated with this narrative. A central bar anchors the space socially and visually, while a symmetrical layout supports efficient service and intuitive circulation. The transition between interior and exterior is seamless, allowing the dining room and terrace overlooking Victoria Harbour to operate as a continuous environment.

Material and lighting strategies enable the restaurant to evolve throughout the day, shifting from bright, open lunches to intimate evening settings. Artisan contributions, including bespoke mosaics, rattan weaving and custom joinery, add depth and texture, while contemporary artistic elements introduce a dynamic layer. The result is a refined, immersive environment that prioritises atmosphere, movement and coherence.
