The Toronto location of Estiatorio Milos was conceived as an elegant expression of the brand’s core identity, blending authenticity, simplicity, and a dialogue between tradition and modernity. Designed by the interior design firm Jeffrey Beers International, the project addressed a complex architectural challenge: the unification of three distinct and structurally varied spaces into a cohesive and harmonious dining environment.

The design approach embraced the essence of Milos, transforming spatial constraints into opportunities for clarity, light, and connection. The first volume, a long and narrow double-height space with prominent street frontage, underwent significant intervention to reveal its full verticality. Existing structural beams were reinterpreted as sculptural elements, enhanced with integrated uplighting that accentuates the height above a striking 65-foot marble bar.

The second space, situated beneath a central skylight and framed by heritage stone façades, presented the most intricate conditions. Here, historic limestone arches were preserved and celebrated as integral architectural features. A carefully considered installation of angled timber louvers screens adjacent elements while maintaining the flow of natural light, creating an atmosphere reminiscent of a European courtyard that transitions seamlessly from day to evening.

The third space was developed as a private dining suite, distinguished by a barrel-vaulted ceiling and refined detailing in oak and brass, evoking a sense of intimacy and craftsmanship.

Throughout, materiality and spatial composition work in harmony to evoke Greek hospitality, resulting in a refined and immersive environment that reflects both heritage and contemporary sophistication.
